At Craft Fish Co., every fish starts with a single line in the water. Our founder, Captain JJ Gerritsen, still operates our commercial fishing boat the Piky off the U.S. Pacific Northwest coast. With a small, skilled crew, JJ catches each albacore one at a time using pole-and-line methods. This traditional fishing method has been practiced for centuries, passed down from generation to generation. It is considered the most environmentally sustainable, socially responsible, and eco-conscious way of catching tuna. It is highly selective, where only what is targeted is caught, zero bycatch, no unwanted species, no waste, and no disruption of marine ecosystems. Just one fish at a time, caught with intention.
After being caught, each fish is expertly handled and immediately placed in a refrigerated seawater system onboard the Piky. This preserves the fish’s freshness naturally, keeping it in peak condition from ocean to shore.
The fish are then delivered to a local artisanal canning facility, where the care continues. Each one is hand-filleted and hand-packed into tins. No machines, no mass production. The fish is cooked only once, in the can, to preserve its flavor, nutrients, and texture. The result is unparalleled, a tin of tuna with a delicate texture and exceptional flavor.

Most commercial fishing is built for volume, not care. It often relies on massive nets, overfishing, and bycatch that harm marine life and ecosystems. We choose a different path. We understand that the ocean is the most regenerative ecosystem on earth and every decision we make from our fishing methods to our fish processing considers the health and future of this delicate and bountiful resource.

The Craft Fish Company is a small business with deep roots. We do it all ourselves, from catching the fish to packing your order. Every fish we pack is traceable, and every decision we make is built around sustainability. Because to us, stewardship isn’t a marketing word, it’s a way of life. If we can’t do it right, we don’t do it.
We take care in every part of the process because we feed this tuna to our own family. Our co-founder, Jessica, is a family nurse practitioner who has seen firsthand how food choices can harm or heal. She’s a big reason we’re focused on more than sustainability; we care about what goes into your body, too. Our albacore is low in mercury and high in clean protein and omega-3s. No fillers. No weird oils. Just real fish with real nutritional value.
